Eggplant Pickle (Gluten Free) is without doubt one of Lee's best creations. She has been batching this rich full flavour pickle for nearly 20 years. It is loosely based on Indian Brinjal flavour. It is a highly complex pickle to make but all the flavours incorporate well. Use as a condiment or in cooking all manner of dishes. See our recipe pages.
